Rotunda to Master Ceiling
Ignore the bookcases and just look at the trim on the front of the photo. I like that design as you enter from the great room. The ceiling could them be a dome. We could add a niche on the back wall also.
Like the boxed beams with the bead board in the kitchen.
Like the box beam with the flat ceiling for the kitchen and breakfast. Would have to see the ceiling heights and figure out how to transition to the hearth.

I like this treatment for the long hall off the foyer to break it up a little.
Another option for the master. I flat ceiling with some molding to add a detailed pattern. We could add faux or wallpaper in the center.
We could do a dark stained or enameled beam in the kitchen instead of an enameled. This might stand out more and draw attention to the ceiling.

Great Room Ceiling
I see that the great room is two story with a flat ceiling but we might be able to add a truss in either enamel or stain if you like this look. Would need to figure out the flow from the kitchen to the great room.

A pattern from molding might look nice in the bedroom.
This is an option for the hall ceiling.
