Need help with information in signing a contract for kitchen remodel

We are about to review the estimate and sign a contract with a contractor to remodel our kitchen. We are not sure of the final selections with the sub-contractors and want to make sure that this is done correctly. Also, what is the usual payment timing to the contractor? Thank you.
