why sow directly in garden verses indoors

I'm ready to start sowing peas,beens,pumkins and gourds and was wondering if anyone new why the seed packets recomend direct sowing into the garden. My temps outside are still too low for direct sowing and a darn critter has eaten my pea seed 6 times now. I'v tried bird netting wrapped in three layers so I'v given up on the direct sowing for my large seeds. They don't bother the plants that reach above 3 to 4 inches. Over the years I have started pumkins and gourds in seed flats and they've done alright but I was wondering why they say those plants don't transplant well. Is it from root shock or the change in the soil going from potting soil to garden soil.. Does any one possably know?
