How do I access the open rafters in my kitchen ceiling?

If there is a floor above, just pull down the drywall. Just make sure you have wood joists and floorboards, not engineered joists and plywood. Be ready for surprises. If you're on the top floor, you would have insulation issues if you did that, so you would need a pro to build a false ceiling.
