You don't have to open the jugs as soon as you see a sprout. If you are concerned about heat, you can just open up a couple of vent holes in the top. Chances are the other seed will sprout soon.

I've got a lot of tomato sprouts and haven't opened anything yet. Tomatoes like it warm, so they'll be fine in their little hot houses until it gets really consistently hot. And if it's still getting cold at night you don't want them exposed to that so the vent hole at the top of the jug is probably fine for now. All I'm doing differently this year with the unseasonable warmth is making sure they have enough water. I haven't had to worry about that in years past, but this year is a bit different here in the east. If you're getting regular rain in Co. then that doesn't apply.
