Exterior Oil Stain on Planting Surface Question

My hubby and I just finished building 2 raised bed gardening sections with red cedar.

The instructions say to stain with semitransparent exterior oil stain.

In the instructions, it directed the builder to stain all the wood before assembly but my hubby missed that part and I didn't have the heart to tell him otherwise. I was just so proud that he got them done.

My question is....the reason I didn't use pressure treated lumber is because I was concerened about the chemicals from the PT lumber leaching into my planting soil and ultimately what I am feeding my family.

1) How concerned should I be about the exterior oil stain doing the same thing (contaminating soil)?

2) If it's ok to stain the bed, should I stain inside, outside or both?

3) What happens to the wood if I don't put anything on it?
