Habanero Peppers and Vinegar

Hello all,

I bought a couple pounds of Habanero peppers from the local farmers market a couple of weeks ago.

I removed the stems, and blended them with some vinegar. Haven't had a chance to finish the pepper sauce off, so I sealed it and put in the fridge.

My Questions:

Will just adding vinegar be enough to prevent the peppers from spoiling?

How can one tell if the pepper mixture has gone rotten/spoiled? Does it smell different? Mold, Bubbles?
