How to finish Subway Backsplash side

I got some Daltile subway tiles for free and I thought about installing backsplash myself as a temporary backsplash on our house so my gas range will not back onto drywall.
We'll be changing whole kitchen in around 1-2 years so it will eventually get changed.

I see that people install bullnose tile vertically at the end of a run, but I do not really like the look of it.
Can you just finish the run with a cut subway tile ? Maybe put caulking on that edge so you do not see a cut tile if looking from a side at backsplash ?
