I could see an eating spot for one if you extended the cabinet top beside it to the wall underneath the breaker box and slid a small backless stool underneath it to sit on when eating.
Another option would be a tall multi-function cabinet.

If you fill in the entire area and take the outside edge from the cabinet corner to the door, and you get 4' or enough for two to sit, I'd consider making a template and having a glass top made. To keep it simple you could attach a 1 X4 piece of wood across the end of the cabinet and around the wall to the door. Paint it the same color as the wall and put the glass on it. Visually the glass keeps it feeling more open than a solid top. Two small chairs that will fit with the backs against the glass would give you a breakfast area.

sometimes ,it just takes time to find the right idea for a space like this, it's your home so the space is not going anywhere soon:) i would say take your time, and while your waiting keep an eye out for that perfect piece of furniture.if you rush it ,you will find yourself spending a lot of time and money redoing this corner, just a hint sometimes second hand stores have the right piece. you can always go custom pricey but affective.

Be sure you don't block the electrical box!
