LED will offer more options for your shelves if you do decide to light them (will probably want a channel routed under them so they are hidden if you do decide to light them). They are smaller than Incandescent, so easier to hide and LED tape lights are easy to cut to fit to make custom sizes. There are many options. Make sure that the color temperature matches whatever you have in the rest of the kitchen.
I had previously shown some open shelves with LED lighting on this thread. If it were me, I’d find the thin strips instead of pucks. There are tons of options on Amazon, Home Depot, etc. or you can talk to a local lighting store. Make sure you look at the light and see how it reflects off your countertops (don’t recall if you have polished or honed). You may want a baffle to cover the light so it disperses the light and you don’t end up with hundreds of dots reflecting off the countertops.
I’m torn on lighting the shelves. You may want to get a battery operated unit and tape it up and try it to see if you like it. There will be shadows if you don’t light it, but they won’t be as deep as your upper cabinets, so it may not be an issue. If it’s an area where you will be working (cutting vegetables, etc) you may want them on the bottom shelf.
