another question on spaghetti sauce without meat' recipe on NCHFP

OK, I know I'm over-thinking this, but I'm still nervous about canning things. The "Spaghetti Sauce without Meat" recipe on the NCHFP calls for a cup of green peppers. Can I use hungarian wax peppers instead of green peppers? I have tons of them and thought it might add a nice kick.

Also, if I don't have enough tomatoes that are ripe, can I process the tomatoes I have (remove skins and put throught food mill) and freeze and take them out later to can when I have another batch that is ripe?
