You can substitute an equal amount of any sweet or hot pepper for the green peppers, so Hungarian Wax are fine.

You can freeze a partial amount of tomatoes but be sure to weigh the amount before prepping and write that weight on the package/container of sauce. That way you'll know what % of the 30 lbs. of tomatoes required for the recipe has already been prepared.

What is even easier is to just freeze the tomatoes whole until you have enough. That is what many of us do.

You can do all the skin removing - they just slip right off - etc. after they thaw. No advantage to doing it ahead of time and it is just extra work.

Now you tell me :) Too late, but I'm making tomato juice and freezing it, so I can can some whole tomatoes in juice later. I'd have to make the juice anyways. But, in the future, I will be freezing instead of panicking to process tomaotoes constantly before they go bad! I'm exhausted.

I agree it's extra work but sometimes it's more manageable to deal with a smaller batch of tomatoes than a full 30 pounds, depending upon your kitchen and your experience.

There might also be a space consideration. How much extra room does your freezer have?

If you are up to doing the entire batch at once and there's enough freezer space to accomodate the tomatoes, then Dave's suggestion is a more efficient one.

Yes, I think Dave's suggestion is great, as usual! Luckily I have a chest freezer in the basement, that is rapidly filling up, but still has enough room for some tomatoes. I am a novice with a small kitchen :)
