Pretty much any vanity can support the weight of a granite top. The good news is that you may be able to use a remnant and save a few bucks.

What is the right approach: go to a granite shop and ask for a remnant and have them cut it to fit the sink?

It depends on the granite yard. Where I go, they have a section with all the leftover pieces of a size to be useful. If I find something in there I like, I can get them to cut and install it for me, same as if I were buying a large piece. An exception may be for something really on the small size like a fireplace hearth, in which case they would cut it and hand it over.Like the large slabs, they price the granite by square footage used.

HOWEVER, not all yards work like this. I think it's more common for a yard to carry the goods, but to sell them to a fabricator who comes and carries the piece(s) away to fabricate at his place. He would also do the install. This sort of purchase is usually you buy the entire piece and use what you need.

Because a fabricator purchases whole slabs from the granite yard and then uses what is needed, he may have his own stock of left-overs. If you have a fabricator, you should ask. If you don't have one, you should find one. Personally, I like my one-stop shop.

The less fussy you are, the cheaper the price. Almost every granite fabricator has a vanity top or two or three with the wrong sink hole, color, whatever. Those tops are one step from the scrap heap. Anything they get for them makes the loss they took on them less painful. Take cash and a template.

we bought a scrap piece that was chipped on both sides - was meant to be a pre-fab vanity - for about $ 150. The fabrication to make it into something useful was much more, when it really shouldn't have been a big deal to cut/polish.

Almost any prefab granite vanity with an undermount sink cutout can be had for $150 including backsplash if its less than 60". No need to go remnant route and then pay $275 for an undermount sink cutout!!
