kitchen remodel: cabinets hung before drywall repair

New kitchen cabinets were hung the day they were delivered. I was not at home. Two questions:

They were built locally. How important is acclimating for cabinets?
They were hung before the drywal was repaired. The whole backsplash area (7'x 18") between counter and upper cabinets is open to studs which extends behind the cabinets. They should be taken down and drywall repaired, taped and textured, correct?

My general contractor's crew did this, and upon his arrival, he said nothing.

The wall behind the cabients should be fully drywalled and taped with at least one coat of mud over the tape. Cabinets shouldn't be applied directly to the studs. But, no, the area where the backsplash goes shouldn't be textured if you are doing tile or wallpaper or some other type of decorative backsplash there.

I'd like to see the sloppy drywall work next, esp. where it meets the cabinets. I'd demand they be removed and reinstalled after the drywall work is complete (including the clean-up). I kind of prefer the idea of mice, bugs etc, not having the possibility to move back and forth behind cabinets and in walls.

In addition, the backsplash will be tiled.

By any chance are any of these exterior walls? I'm wondering about the insulation or lack thereof.

Thank you for the responses. I will upload photos later. In response to Homebound, this is an interior kitchen wall that is shared w/the garage on the other side. Built in 1957, no insulation.

Drywall is a required fire break. Years ago in exactly your situation the building inspector made my neighbor's contractors remove the cabinets and drywall, tape and mud before rehanging. I'd demand it.
