Only because you asked I looked at my hinges and there is a sliding mechanism that seems to override it. I slid all three and the door slammed shut loudly with no effort at all. I don't know if that slide is universal, and I did not look at the drawer slides.

If they're older there is probably a piston type mechanism on the cabinet frame that can be removed. Pretty nearly any newer soft close hinge should have a slide or a piece that you can remove on the hinge itself. Some people like them better with the soft close enabled on only one hinge, not both.
