I can't comment on size and fit as I have no idea how big your kitchen is or how deep the counters are, but as to the under mount with laminate counters....

These days there are hundreds of laminates - not your grannies laminate - to choose from with different rounding / edges, etc. I love using laminate as it is a very good looking option and cost effective - starting in some states at $13/linear foot. The options are tremendous.

Have you thought about a drying rack that spans across the sink? There are a few on Amazon.com that would allow you full use of the single bowl sink but still have to capability to dry items. Good luck!

That's a nice size sink, but I imagine it won't fit the drainer while you're doing dishes -- maybe you could stick it in there between times, but I've always figured a big sink was for getting the pans in easily...
