Wall should have been trued up before this was installed. Not much you can do now except put some kind of border/framing. There are some metal edges, but I'm not crazy about how they look. I would live with it for a while and see if it kind of grows on you. Maybe some sconces on the side walls will help take your eye away from that aspect? Don't have to be electrical if getting wires into the walls is an issue. Just decorative to distract the eye.

Yes, we're planning to install sconces and towel racks which will provide visual distraction. It'll probably be fine. We could "true up the walls" by building up the walls to close the gaps, then repainting it, but it's probably not worth the time and effort.

Building up the walls at this stage would NOT work well. Don't waste your time. Distract the eye. In a month, you won't even notice it. :-)

you could remove the mirror and have a tiny strip of wood nailed to the wall adding cookies /shins in the spots where there is gaps ,I think that what they are called to fill the gaps and level the wall ,then reinstall the mirror ,

I have gaps behind mirrors and am concerned about insects and spiders finding these spaces to be a good home.

Any advice as to what filler or caulk I could put along, under the edges to close the gaps?
