maple sugaring and niter

Hiya, we have doing hobby scale maple syrup for years. This year I had a lot of niter :/ of course there was always a little in every batch we cooked up but this year for some reason it was extreme. Is it that from year to year there are different minerl qualities to the raw sap? I also have a suspicion that maybe my fire was hotter this year... I had a great supply of dry maple firewood (sacrilege


to burn maple to boil maple sap??) here is my hillbilly evaporator.
