It is a mustard and you can use it as you would any green. Nothing you can do about it bolting (flowering/going to seed). That's just what happens when it is grown in warm/hot weather. If you want a continuous supply then you will need to succession sow it.

So the stuff that's bolted is done??? Should I just harvest what's left and plant new stuff??

Usually it becomes less palatable when bolting. You could let it go and save seeds or harvest as much as you consider edible. All the varieties that I have grown are much sweeter and milder than the India mustards.
