Bathroom Design Help!

Measurements for kids bathroom is 5' wide by 11' length. I was going to put in a 60" vanity with one sink. The plumbing was centered in the wall for one sink and electric above the mirror was also centered. The walls were just tiled. I am now having second thoughts about the 60" vanity as I am concerned its going to be very tight and look very narrow once everything is in. I would get a 48" vanity but I don't think that can work as if the plumbing is centered for a 60" then a 48" would have to be 6" off the wall on one side. That's not enough space to put anything there and I think just enough for things to fall through and get annoying. Unless I do an off centered sink but don't think that could work to well either. And then there is the lighting above the mirror issue. Unless I just don't put any lighting and rely on the LED spots in the ceiling. There are 2 rows of spots each about a foot off the wall. See picture below. Any advice would be greatly appreciated
