Old Textured Plaster walls

We have original (90 year old?) textured plaster walls and ceiling in our hallway and stairs. We want a smooth finish...is it worth tearing out the plaster and re-drywalling? Drywalling over top? Parging to get a smooth finish? Any tips are appreciated!

Removing plaster is a messy process. If possible, place thin slats over the plaster, then drywall

If you spray the plaster with water there is no dust. When you remove the plaster, you can insulate.

I'm not sayin' to re frame. It is worth the aggravation to insulate, it will save in the long run. Unless you can save the old plaster that's there. Plaster has a character that sheetrock does not
