If you haven't done this already......start cutting back on the water (not all the way) to your trees......make them get thirsty. That usually helps convince them to go dormant.

Many fig growers (myself included) will cut back on fertilizer and waterings in late summer to prepare their trees for the coming winter. Too much fertilizer in late summer will cause vigorous green growth that will not have time to lignify properly before cooler temperatures arrive. Un lignified wood can be easily damaged by cold temperatures and will need protection. If the wood has lignified on those two stubborn trees, you should be OK.
