Well, they'll "last" over a hundred years. In other words, safely canned and properly stored, a sealed jar will be just as safe to consume in 2110 as it is in 2010. But no one would enjoy it much.

It isn't that foods become "unsafe." It's just that over time food browns, becomes mushy and loses flavor.

Generally you can assume an optimal life of one year (i.e. canning season to canning season) though some canners work on a two-year cycle so they can get the most out of their garden space and can process more efficiently.

Sugar-free and low-sugar products won't keep as well, so I wouldn't assume a year for your peaches. Probably six months tops.

Again, if your canned goods are exposed to light and/or extremes of heat and cold, they won't retain their texture and color as well.
