I would steam a few of them for 30-40 minutes and see if they are too fibrous. - Dick

Since your beans are in different degrees of maturate I would soak overnite and can them. The year I grew hutterite beans I dried them all and then soaked and canned later. I'm growing them again this year. I will be growing them on string next year in hopes of a larger and better crop. e-mail me if you need more info Paula
