Consider going a step beyond the honing and get it brushed/leathered. That will bring back the rich color of the polished, but without the glare or the fingerprints. Ask if the fabricator can do a small piece for you, so you can see the affect before committing.

South- Thanks for the suggestion. I can't seem to find blue pearl brushed, but I did find black pearl...and it's very nice. Good idea to have a blue pearl sample brushed, to see if it turns out as well :)

When I went for the templating of our countertop, we also needed to decide on the finish. They were able to show us small samples both honed and leathered/brushed. There was a clear difference between the three, and the richness of color and touchable texture sold us. Now that the countertops are installed, I am SO glad we didn't go with polished or honed.

If you can find it in the kitchen gallery (I can't seem to find a direct link) at this site (http://www.percocomarble.com/products/kitchens.php) there is a leathered ubatuba with a similar pattern to your blue pearl. There are a number of leathered granites in that gallery, and also a good explanation of the various finishes on that website.

I've seen leathered and honed Emerald Pearl that is really pretty. I believe the mica in it is what makes the shine, so you may want to ask about it possibly flaking in the long run.(Maybe it isn't mica, but..) That would be my concern with it.
