This is from the other night when we had guests for dinner. The pasta is a redux but I added 2 pestos...one is a sun-dried tomato , used the ones that my GW buddy sent me...and the other was a basil/pine nut traditional . Then my best friend on GW sent me a recipe from the Today show for Eggplant Napoleon and it was wonderful. Also made stuffed portobello mushrooms. So here goes...I KNOW you love to drool...as do I.

Fresh tomatoes marinating w/ red onion, garlic, EVOO, and salt and pepper

Add fresh basil:

next add DH's pasta and cheese...ready to MANGE ! So wonderful on a HOT Alabama night by the pool....

    One more; kind of a mixed bag off of the smoker. From the right- ABT's, which are jalapenos, stuffed with a cream cheese/cheddar cheese mixture and wrapped in bacon. In the middle are MOINKS, which are just meatballs wrapped in bacon, and on the left are Thai stuffed chicken wings. I LOVE stuffed chicken wings, but the de-boning is very tedious!

    Thanks Elizabeth....now i have 4 MORE ways to waste precious time LOL. I am always looking for an excuse. One thing I do is to look on a blog I love and then check the ones they have links for on their page. I have found a number of them that I like. I wish I had more time though to look. c

    Oh, what a marvelous thread you've started. I've cut and pasted so many recipes off of this one . . . .

    This is what I coached my 15 y/o DS through tonight -- Vanilla Berry Souffles (yes, a Publix apron recipe -- simple and so delish). Supposed to have raspberries but I have blueberries, so BB instead. Dark Chocolate hidden under that meringue . . . It was a great cooking lesson, practiced separating eggs, beating the whites, folding in yogurt. I think the boy just upped his chick magnicity a great deal.

    Love blueberries, but have to wathc how many I eat--they don't love me! lOL

    pattiem--we're in Rockland, so I guess you could say we're near Orange County! I'm actually meeting up with another GW'er at Woodbury Commons (in Orange cty) later this week for lunch.

    For you NC people; our last visit down, we ate at Shuckers in Wake Forest (good food, and wait staff was terrific) and at the aforementioned Angus Barn (which is always a treat!).

    We'll be visiting NC again later this month. We'll be eating one night at my parents' favorite neighborhood place Capri (on Falls of Neuse) for my mom's birthday, but don't know what else is planned.

    Patti I will have to look that up. We are vegetarian for most days of the week. we go in fits and starts. Tonight I roasted 2 organic chickens from Earth Fare....presalted then and placed about a dozen chopped cloves of garlic and a large handful of fresh herbs from my pots inside each cavity. I placed the chickens in my Mom's old blue granite roaster and baked them at 400 for 1 hr. Opened the vents to let them brown and baked another 30 min. They were amazing. I also made my Mom's potato salad and buttermilk corn bread with home made jam from the fellow I biked across the country with. H picks the berries in WS where he lives and makes his own . He gave me 3 jars for a gift when he stayed here at my house.

    Where are the pics ???? I thought I had hogged the pics enough LOL. I will do better tonight :)

    rjr: I wanna see your biscuits ! That dessert looks delicious. I have chocoholics here now at my house. My DB and his wife and her Mom who is 90 are here from NYC. They are on their way to their condo in Destin FL. You are the sweet one :)

    cat: they must have different issues of that mag in parts of the country. That wasn't in ours. It looks great ! c

    I haven't been there in a while--some years it seems I go more often than others. I think there were better deals to be had years ago, but it's still nice to get some sort of "bargain!"

    Yum! More food porn! I'm copying and pasting all these recipes for when I have a kitchen again. Chiefneil, can you share your mapao tofu recipe? That's one of my favorite dishes when we eat out. And I can't wait to use the bread starter. I've only done quick breads.

    I just bought some goat cheese at the farmers market. Does anyone know if/how you can roast beets on a grill? I'm eyeing cat_mom's salad, and one of my girls loves, loves roasted beets.

    jsweenc, what a wonderful photo of your family at the kitchen. I love getting the kids involved and enthused about making food. I'm hoping that it'll help them make good food choices at they get older.

    Rhome, I agree you need to try risotto. If you can't find arborio rice, I'd be glad to ship you some. It really is very easy (though you have to keep stirring it so requires lots of hands-on) and so versatile.

    rjr220, I can't believe your son made souffles! How very cool.

    Tonight's dinner at casa pickle was all from our garden or the farmers market. Fresh halibut steaks grilled with lime and garlic (super easy), grilled corn on the cob, salad with garden lettuce, and rustic Italian bread. The recipes for the halibut, cobbler, and grilled corn are on my blog.

    ooh pickle2--love halibut! DH and I usually prefer filets to steaks, but that chunk in your pic looks yummy! We both had some this past weekend at a great restaurant not too far from us--yum!

    Yes, you can roast beets on the grill just like you would in the oven. I usually wash and trim them, place on a double thickness of foil, drizzle w/olive oil, and sprinkle some salt and pepper on them and tightly wrap them in the foil (make a nice little packet). Then, if you can't roast them in the oven, place the packets on the grill, and just cook until tender. You might need to check more frequenstly, and turn heat to low so they don't burn in the packets.

    When I take the packet(s) out of the oven/off the grill, I open the foil a little to allow steam/heat to escape, and then peel the beets when cool enough to handle.

    Caroline, if you do eat out when you travel, I have a few other suggestions if you want them, depending on the kinds of places you like. Cat_mom's favorites sound good too.

    Here's one I have to share now, which I just discovered when I opened the paper this morning. This is a dear friend (with whom, obviously, I do not keep in close contact at the moment); if you like authentic Indian cuisine this would be the place to go.

    oh my gosh.. the thread is getting dangerous!!! Now friends are recommending cookbooks. The last time that happened I received a large box from AMAZON.

    Caroline - you will love the Puget Sound area; it is so beautiful in August. We are well south down in Oregon.

    I'm pretty sure that michiganrachel's photo of the adorable little girl must be fake as the sweet child doesnn't have a speck of chocolate on her pajamas!! That would never happen at my house. There would be batter everywhere. Seriously, what a beautiful little girl.

    I'm drooling...can't wait to get in my new kitchen and start cooking again! I've saved several of these recipes to try. And meanwhile, being new to "The Triangle", I also now have a few restaurants to try while waiting to get into the new house (north of Raleigh; northwest of Wake Forest). Hubby has eaten at the Angus Barn, but I've only driven past....

    Behold collard greens, coconut sweet potatoes, butter beans, okra and tomatoes, sweet onion casserole, sweet potato cornbread, shrimp boil, fried chicken, ribs... all either grown or caught by the restaurant owner and family. Sea salt, pepper, cane sugar were the only seasonings.

    It isn't art, and I didn't make it, but it was the best meal I've had in I don't know how long. Maybe since my grandmother died. I love risotto and foie gras and stir fry and other "fancy food," but THIS is food porn to me.

    Ohhhh, the cinnamon rolls. I can almost smell them. Might have to think about making those, even in August!

    Last night's dinner...Italian Stir Fry? Stir fried veggies (garden broccoli, onions, garlic, baby portobellos, and Roma tomatoes) and shrimp over whole wheat spaghetti noodles and dressed with butter, olive oil, oregano, garden chives, garlic, a splash of red wine vinegar, and hefty amounts of shredded Parmesan...Plus salt, pepper, and a dash of Cayenne. --I just couldn't think of any other way to cook the vegetables and keep them 'lively.'

    Not the best photo, because I think it tasted better than it looks here...

    rhomw: that looks very YUM ! I bet everyone loved it. I spent hours doing laundry and remaking beds after my family left. Got us moved back downstairs to our room, none of my family can do stairs. We had roast chicken leftover so I made us big sandwiches and we had leftover potato salad and icecream. Easy peasy for a tired girl. House it quiet and clean...I love my family but glad to have my space back :) c

    rhome, don't know what you mean... that's a beautiful-looking dish. The green and the red and the pink and the brown all together... quite artistic!

    tracey, ditto the welcome to the Triangle!

    segbrown, that is quite a plate... Gullah food, now there's a unique flavor. DH and I spent our honeymoon on Hilton Head Island. One evening we took a cruise over to a small island and had authentic Gullah as part of the package, complete with entertainment from that singing group that is featured in Forrest Gump (can't remember the name, it's in my scrapbook somewhere). Presentation may not have been what they were aiming for, but I'm sure it was tasty, and that's what counts when it comes down to it. It reminds me of Ethiopian cooking where they put all the "wet" dishes on a common plate, plop down a common plate of injera (bread) and everyone scoops up together. Not a pretty plate, but you don't see anyone complaining!

    Caroline, big sigh of relief for you... I know what you mean about having your space back!

    I just remembered last night where my favorite of all time risotto came from. Last year when we went to Myrtle Beach we got takeout from Greg Norman's Australian Grille. The risotto was a side dish. I wish I had written down at the time what it was, but I remember mushrooms and white truffle oil and something green (maybe chives).

    No pictures of my shrimp and grits (my own version) that DH and I had last night, along with a simple bread that DD made all by herself. I'll leave it to your imagination, but it was yummy!

    segbrown that looks so good. The last remaining group of Gullah live on Sapelo Island off the coast of GA. You can only get there by ferry and you have to have an tour group or pre -arrange to stay at one of the few rentals on the island. We are thinking of going out there and staying at a VRBO for a few days this fall when we head to NC. It is an amazing culture. There are only a few of the people left.

    I just remembered without having to look it up. I can't imagine how it stayed in a place in my brain that I could still access. It was Daufuskie Island, and the Forrest Gump group was the Hallelujah Singers. I can't remember the company that sponsored the tour but I did a quick search and it looks like you could easily find anything that's available there. But to stay on Sapelo (they actually have VRBOs on Sapelo? Awesome!) you'd probably get the same experience, maybe even better!

    Hi all! Rhome that looks sensational- just my kind of dinner! Js, that sounds like a wonderful trip- risotto is one of my very favorite foods.
    I just wanted to do a quick check in- love this thread! We got hit HARD yesterday with a nasty tummy bug and it's taking everyone down one by one. Trying to take care of everyone and prep an appetizer tray for a friend. And somehow, not feeling so hot myself. Hate these yucchy bugs! Back soon

    More things I've never had: Grits, okra, collard greens, truffle oil...

    Trailrunner, actually, even though he didn't say so verbally, I think my dh was missing a more obvious sauce on that 'Italian Stir-fry' dish. The roast chicken sandwich dinner sounds great, and I, too,understand the fun of visitors and the fun of regaining your space after. We have sandwich dinners every once in awhile, or my laziest, and amusingly, one of the kids' favorites is "Make your own dinner night." That's usually about grabbing leftovers, making a sandwich, or finding 'whatever-there-is-you-like-that-there-probably-isn't-enough-of-for-everyone-else-any-more.' Another fun one is "breakfast for dinner night."

    Thanks, Pickle2, for the offer to send me arborio rice! I haven't looked yet, so don't know how it is to find around here. I've seen them make risotto a lot on "Hell's Kitchen," and Malhgold has told me it's one of her favorite things. But the head chef on the TV show is always yelling at the chefs for doing it wrong, or saying 'it's perfect,' so it seems like there is a trick to getting it 'just right'...And having never eaten it, I am uncertain of what I'm shooting for. I'll have to look at the blogs more...

    Susan I looked up the island you visited. Seems the Gullah all left there and it is primarily resorts. There is still the one church that has the singers you mentioned. Jimmy Buffett evidently wrote a song that lamented the "ruin" of Daufuskie Island LOL.

    Sapelo has absolutely nothing there...nada. You have to bring every single thing you need and no one can get on unless it is ok'd by the people you are staying with or you book the one tour group.

    There is one lady and her husband and they will cook Gullah food for you if they are home and happen to be cooking. Here is the link to the VRBO

    haha rhome : my DD and DS's call that "fend for " food....meaning you have to fend for yourself LOL. Tonight is the chicken carcass to make noodle soup...since the temp is not 100 today it will have to be soup weather. Also chef son makes risotto all the time and says the stirring is not necessary...he puts in the liquid and lets it simmer and stirs some and it still comes out creamy. He has a magic touch though :) He also makes fake risotto with things like celery root or cauliflower. It is very yummy . You cut it up in very small dice and proceed with your liquid ( use less) and add the other flavorings and then add the cheese and cream . It comes out creamy and wonderful and is great for folks that can't have rice.

    rhome, in our house, we call that "normal dinner"! I guess considering when I do cook it's way more than the four of us can usually eat, we have more leftovers than some, so the fridge fills rapidly. I can't imagine you having leftovers very often!

    Caroline, that link to Sapelo with the description reminded me of the time DH and I went to Bald Head Island off the NC coast near Wilmington. There is no motor traffic allowed there and we had to bring all our own stuff as well (linens and towels may have been provided). We packed food and most everything in banker's boxes; we must have taken at least 7-8 of them on the ferry over. In February, which is when we went, it was not really worth it for the weekend we were there (extremely cold and blustery), but in the summer or mid-fall, Sapelo sounds lovely!

    wow susan have you looked at BH Island lately ??? The prices are HIGH!!! And there is now a 14 thousand sq foot shopping market for anything you need. Still no cars. How are you supposed to get to anything...? Also a big golf resort there too. Guess things all change don't they. I am looking forward to cooler days and just thought Sapelo sounded interesting and away from it all. We'll see. c

    I haven't really had reason to look there lately. We went that once but we love convenience so it's not really been a consideration for vacations, especially since children came along! When we were there, a golf cart came with the condo. And IIRC, prices were already high when we were there 15 years ago; I'm not surprised, except in this economy, I'd expect things to slow down a little. I guess they really want to keep people away. The market sounds like what we needed that weekend.

    You sound like a person who doesn't mind adventure, so Sapelo should be right up your alley. : )

    What was for dinner tonight? Fourteen more slots to post your food pics!

    I made a Mexican skillet with rice and beans but found some crab legs that needed cooking, so the children ate Mexican, DS had a few legs, DD choked down one tiny bite of leg meat, DH and I ate the legs, baby had bread. Again, no pics. Sorry. When baby's hungry, we have to pray and start eating quickly!

    No pic either although I thought about it LOL. I took the bones from the 2 roast chickens and simmered them lightly with the drippings. Added some onion and celery. Strained bones and added Amish egg noodles that we bought in Indiana to broth. Simmered them till tender and then thickened a little with milk and flour and added grated aged cheddar cheese. Added the meat I had picked off and tossed the whole mess in a 9" sq casserole. Topped with homemade breadcrumbs and more grated cheese. Baked at 350 till brown and bubbly. DH made a salad...well he started too...cut the ends of 2 fingers really badly so that is why no pics...blood everywhere. He is fine now but no dishwashing for him , haha, and no piano playing tonight :(. He has bandaids all over them.

    We need some new ideas here folks...maybe we will all get creative on the weekend !

    Oh as to rentals slowing down I have an interesting story. My DS1 ( chef) and his wife ( Captain dining room) work at Blackberry Farm in TN. He says that they are full every night. You can Google and see what it costs to stay there. Sit down first. I have checked rentals all over the country on VRBO to get a feel for prices. There are no bargains at all. Everything is very expensive and if you check their calendars almost everyone is quite full. So somebody out there is doing fine or still spending even though they don't have it. Hard to know. Ah well we need the economy to get well. c

    I freely, but a little sheepishly, admit that we had eggrolls and chow mein purchased from Costco's freezer case. Today was a long day and they were left from the day I bought them for a treat when there were only 2 kids home with me, and they got to choose. :-D

    Sit down first. An understatement if I've ever seen one! I was guessing before I looked and too low by more than half for the "cheapest" rooms. I'm sure it's fabulous, and everything they describe and more, but... oh my goodness. $250 per child per night in addition to what you're already paying? Wow.

    I have family in East Tennessee. I know there are many varied communities even there (and please please please don't anyone take offense at this, it's just my opinion based on where I've spent the most time there) but I don't think of that area as a hotbed of sophistication. Down to earth, yes. I'm thinking many patrons of Blackberry must travel a good number of miles to get there!

    Nonetheless, a very cool place, an amazing place of employment for your DS. Is he one of the two chefs featured?

    rhome, IMHO, there is nothing to be sheepish about! Nothing wrong with using what you have in the freezer after a long day, even if it is prepackaged!

    Susan you are right on when you wonder who is staying at BF. I asked DS and he said that they have very few walk-ins, aka locals. It does happen but not often and they have to make a reservation way in advance. The patrons at BF are from far and wide. You can get on the website for Relais and Chateau properties and get a listing of their world wide designated locations. The BF achieved this standing in 2005. Things have changed there and a lot of folks have left recently :(. DS is a sous chef, he has only been there a few months. His DW was just promoted so they will be staying a while longer...building resumes :)

    I have been informed that in threads like this we often intimidate people who do not do all their cooking from scratch...So it's good for those people to know we are normal humans, and sometimes use prepacked stuff, and have been known to eat 'junk food,' too! We are busy, too, and get tired, and you've seen us talk about sandwich and breakfast dinners. Like Caroline, says, we just don't show the pictures! :-) My family, though, is just as interested in cooking as I am, so it's our family recreation. Teen friends of the kids come over, and when my kids ask what they want to do with the evening, they usually say 'bake something!' It's great. (and we're talking teen boys here)

    Wow, we're already back to Friday. I wonder what surprises my oven has in mind for our pizzas tonight? If it can do checkerboard patterned browning next, I could be impressed... After last week's bi-colored results, I ordered 2 oven thermometers to figure out its secrets.

    rhome, that sure is true. We all have our desire to share and help others get the most out of their new kitchens . It doesn't matter at all what the skill level, we can all learn and grow and enjoy. I see tons of talent everywhere I look and I keep looking even though I know I can't begin to make or don't want to make what others are able to do. I still love to look. I hope that everyone realizes that it is out of a sense of community spirit that we all post here long after our kitchens are "done", also I am not sure we are EVER done :)

    Here is part of what we did this afternoon. DH's fingers were still sore but he wanted cookies ! He has perfected his Italian Seed Cookies and wanted to make them. So here are some of the steps and the finished product.

    These are almost exactly like the cookies from Brocato's bakery in NOLA. We just had 4 bags of them from SIL's visit and it sure was hard to tell the difference. The Brocato cookies are a tad sweeter but I like DH's best :) It has taken him years to get them perfect. He purchased ammonium carbonate as the rising agent and also twice bakes them. It makes all the difference.

    I wanted to show you Alto and Sax ! They are my starters. They are now about 2 yrs old. WOW do they love me LOL. Here are pics of them before and after feeding and then of the 2 breads I am in the process of making. It is a couple day thing to make bread with wild yeast starter so stay tuned to tomorrow .

    San Joaquin Sourdough auto lyse ( I let it set about 30 min)

    Polish Country Bread ( a light rye) auto lyse -

    Polish Dough is beaten in the KA mixer for 4 min on speed 2 and then let to rest 40 min. Then you do 2 stretch and folds. Rest 40 min and again. Then rise 2 hrs or so and bake.

    Here is another way to do S and F. In the bowl with a spatula. Do 30 turns with the spatula around and around quickly bringing the dough up and over a little each turn. Do this every 30 min X 3 times. You will be amazed at the strength the dough acquires with a small amount of work. Here are pics DH took :)

    Caroline, I almost always have sesame cookies in the house- they're a staple here! YUM Today was another horrid day here- the tummy bug is hanging on and I had a little mishap that necessitated a visit to the dentist. I really need this day to be over!. Tomorrow I'm hoping to get to a homemade filled pasta and some brioche

    First loaf just came out of the oven and DH made meatballs.Sweet man !

    Have you thought of listing you recipes in order so one can look through them w/o going back through the whole Blog ? I love to read but sometimes I just need the recipe. I will check back after rhome posts her PIZZA !

    I completely agree that we just don't necessarily take pictures of the hot dog and burger dinners (of which there are many- my boys like simple foods) - and in my case cooking is part of how I earn my living so I do absolutely make things that may not be the norm. It all depends on what's on the schedule for that week. I would surely hope that no one is intimidated. When I teach I try to encourage people to have fun in the kitchen and try something out of your comfort zone once in a while. Certainly not every night, but it can be a great family activity. And no matter how simple it is, pretty much anything you make at home will be healthier than something you buy premade.
    Caroline, I've had a lot of requests for a recipe lonk- I'm actually trying to figure out how to do it.

    I felt so bad about wasting one of our precious remaining posts with that silliness! I wasn't thinking... Not used to being post #140-something.

    Those breads are amazing. I've never gotten into 'starters,' but would love learn and to make sourdough.

    Tonight's pizza...No stripes, but I played with the oven a LOT to try to get a balance between properly browned crust and tops.

    Ham and onion (our regular tomato-based pizza sauce) for the not-too-many-vegetables-please crowd:

    And now, thanks to my new East Coast friend, Susan, I thought to use pesto and the goat cheese I've been wondering what to do with...So, in case not everyone liked the goat cheese (they did), one with 1/2 goat cheese and 1/2 Mozzarella. 21 yo ds declared pesto and goat cheese his new #1 pizza!:

    And DH was disappointed I baked this one last, after he was so full of the others...But he managed to eat a couple slices anyway...Pesto, goat cheese, spinach, mushrooms, chives, and a little sprinkle of Parmesan:

    Phew...I think did all right under the pressure! ;-) My kids thought I was nuts taking pictures of all the food.

    And forgive me, but this is really the best part. We go ahead and eat around the kitchen on pizza night, since we grab and eat as each one gets finished:

    Well this has been a real treat ! We made it to 150 and what a trip. The pizzas and those sweet children were a fitting final post . I hope others will start a new thread so we can all enjoy the kitchens and the experiences that others are having. There is so much out there to learn and I know we have some intrepid cooks on this forum. Thank you all for the rousing support ! c
