What size/profile Schluter Strip to use for Beveled subway tile?

Hi all- I am doing a kitchen backsplash and have a few areas where the tile will need some sort of finish or transition/ending piece (see picture). However the tile I chose (Jeffrey Court Pearl White Beveled) does not have any bull-nose or transition pieces and it's proving hard to find a good match for the color at the tile shops. Someone suggested I use a Schluter Strip instead. The problem is because of the varying thickness of the tile (depending on where it is cut in the bevel), I am unsure of which profile and size to use. The less amount of strip shown the better in my opinion. I was considering the Jolly style (minimal show) or the Rondec style (rounded to better accommodate varying thicknesses among the tile).

Tile min thickness 1/4"
Tile max thickness 3/8"

What profile is best for beveled?
What size do I use?
Is the Schluter strip edge supposed to be higher, lower or flush with the tile installed?

THANKS!
