there are 2 issues, removing it, and then replacing it with something you prefer. you'll have a problem finding a new tile to insert...how about thinking a bit larger, remove the tiles down to the cooktop and side to side within a partial tile of the cabinets and filling the whole with stainless steel, tempered glass, something new, that will look like its meant to be there.

but if you don't much care for the rest of the tile anyway, you might paint over this mural til you are ready to replace it all?

It is possible if done with care. Personally I'd use a rotary tool like a Dremel or grout remover to remove the grout between the tiles I want to remove and the ones I want to preserve, then tape the edges of the tiles to be preserved before prying out the unwanted tiles. There will probably be some damage to the drywall underneath depending on how strongly these were adhered to it.
