I would use a mid tone quartz. Your floor looks busy and so does the vanity.

Take a chunk of the tile, a cabinet door, and one of the sinks with you shopping for countertops.

A material darker than the sinks, maybe even darker than the wood (I can't tewll exactly what you have), with VERY little pattern, would look best. You want the bowls to stand out, like floating on the counter.

And the reason you are not continuing with travertine for the vanity tops is? You can't be concerned about etching as you have purchased travertine basins.

I agree with Jan Moyer. I would go with a matte black countertop so that your vessel sinks stand out. Also this pulls from your vanity hardware in the last photo. I would also try and incorporte another black element in the room, perhaps in the light fixtures or decor.
