What lighting would you put in here?

As you can see, it is quite dark when the range hood (just installed today, yay) is off. What would look good with true white and stainless steel? We are thinking of getting rid of the ceiling fan.

You should definitely plan for under cabinet lighting. Even though we have ceiling fixtures we pretty much use our UCL exclusively.

For ceiling light I think you'd be best served by some kind of track lighting system. If your ceiling is 8' high, you should have ceiling fixtures equalling approximately 35 lumens per square foot. (This is in addition to UCL.)

I agree with necessity of UCL for your counter top workspace...

Not a kitchen, but in our livingroom (with 8'4") ceilings we recently removed the (short) rod-hung ceiling fan (similar to what you have in your photo), and replaced it with a prettier carved-wood "hugger" (no hang) ceiling fan (gain in both aesthetics and head clearance), and installed a set of four small dimmable slightly recessed LED lights, that illuminate the space much better than the ceiling fan kit-light ever could have.
