MANDARIN SALAD WITH SUGARED PECANS

Sugared Pecans: (or almonds)

1/4 c. pecan halves (or sliced almonds)

4 t. sugar

SWEET SOUR DRESSING:

1/4 C. OIL

2 T. SUGAR

2 T. white or cider vinegar

1 T. chopped fresh parsley

1/2 t. salt

dash pepper

SALAD:

6 c. lettuce (I used romaine but you can use a mix of romaine and iceberg or mixed greens)

2 stalks celery, chopped (1 cup)

2 green onions, thinly sliced (2 T.)

1 can mandarin oranges, drained

In 1 quart saucepan, cook nuts and sugar over low heat about 10 minutes, stirring constantly until sugar is melted and nuts are coated. Cool, break apart


In tightly covered jar, add all of dressing ingredients. Shake to mix. Refrigerate until ready to serve.

In large bowl, mix salad ingredients. Pour dressing over salad and toss until coated. Sprinkle with nuts. Serve immediately.

    garden peonies for the centerpiece

    Lace tablecloth, Aynsley's Pembroke (which has peonies on it), damask napkins in silver rings, husband's grandmother's cutlery and our "go to" glasses (because you can dishwasher them)

    I just made this salad last week, but also added roasted Baby beats. It was excellent. I was worried about too many ingredients, but it worked.

    Wow.... those photos are amazing! The salad looks absolutely delicious. I will probably make it next week, as I just went grocery shopping two days ago so I don’t have the ingredients.
