Really depends on how long you want to have the odor from the floor finish and how many coats you want. If its done in cooler, wet weather it can take days for the smell of the poly to leave the house. As someone who can't stand to be in a new carpeted house for several days after installation, I may be more sensitive than the normal person but if a substantial amount of your home's footage is wood, I would go for several coats of the waterborne finish in a shorter time period. Several coats of the poly would take several days because it has to dry at least 12 hrs. between coats.

The Bona Streetshoe and Traffic waterborne urethanes are much tougher than the old polyurethanes and are worth every penny for that alone.
