Let's see if I have this figured out. Since there are no molds: you form the parameter blocks (by hand) first and when they dry, place them. Then you make the second level blocks and adjust them to fit before they are completely dry. When they dry you do the same with the next row. Is that close?
Do you use only 80# bags of S type cement? How long before you can walk on the finish walkway?

r murray, use only type s mortar. Just the right water for a workable mix. Wear vinyl or latex gloves. Perimeter can be laid wet to wet. All others, wet to dry. (making each patty with its own expansion joints) Decide on a pattern or just go with it. Hope this helps.
