None of the Pittosporums are totally drought tolerant, they all prefer some summer irrigation to grow well. If you are willing to provide irrigation, most any of them would grow well. Of the most fragrant and also larger/faster growing, you're probably limited to P. undulating which can be trimmed as a large hedge. Not really fragrant or ultimately that large, P. tenuifolium 'Marjorie Channon' is one that is a great choice for an informal hedge.

Is Pittosporum undulatum drought and deer resistant?

Here I have Pittosporum Tobira for 15 years. It requires pruning to keep it about 10 feet tall, not sure how tall it would get without pretty severe pruning. It is in partial shade here where the summers get hot. Blooms profusely every year, and has not been watered in 10 years. Very fragrant. Deer have never touched it, looks good all year. Al

Sounded perfect except I would prefer something a bit taller. Being in Monterey with cooler weather, not sure if Tobira will gain the extra height?

Deer eat Pittosporum tobita here in the East Bay Area. It can get tree sized with great age, I've got one 25 feet tall in my back yard, but it is very slow to get tree sized. Pittosporum undulatum is not particularly drought tolerant, and doesn't do as well with constant cold winds off the ocean. I don't think you'll find any Pittosporum species that ticks all your requirements, better to look at other types of plants.

Maybe the native Toyon (Heteromeles arbutifolia)? Its pretty fast, even from seed, and supports the native bird population. Also a very tough plant.

Other possibilities? California live oak (trim it into a nice hedge!), hollyleaf cherry (Prunus ilicifolia), birchleaf mountain-mahogany (Cercocarpus
betuloides), redberry (Rhamnus crocea), California coffeeberry (Rhamnus california) (shorter!), hoaryleaf ceanothus (Ceanothus crassifolius)?
