I would skip them.

I think I would proceed with tiling and finish the kitchen without the little shelves. What would you put on them? Just decorative items? I think you will enjoy the breathing room of space on either side of the window. If you decide you want them later, you can have someone install them.

Skip. Even setting aside the shelf size issue, they'd be just one more surface you'll have to clean, since shelves without doors will need to be dusted and wiped.

I would skip the shelves and tile all the way to the ceiling for a very classy look.
