You could level it with the rest of the wall and make the other closet deeper, if that would be useful. You could put a bookcase there. You could have a shallow desk, if you need some homework space, etc. What did you imagine when you ripped it out? What did you do with the plumbing?

I can't see how this corner fits in with the rest of your photos, so can't figure out how the room works...
