Single off set vanity bowl or double vanity bowls?

This is my current vanity set up in my master bathroom. I am planning a remodel and have 2 options:

Keep the current cabinets & paint them, but lower the knee drawer to a height where I can sit at. In this case, I would get a custom countertop with a waterfall edge down to the lower section. The backsplash would come all the way up the wall to be level with the mirror.
Replace both cabinets with a more modern color & better drawer space, while doing a traditional double bowl sink. There is plumbing behind the wall where the knee drawer is for the second sink.

This is not our forever home. We plan to move at least once more but timeframe is undetermined. We want to make sure that whatever we do will be sellable. Traditionally, couples want double bowl sinks, but I also feel like having a vanity space would be attractive to buyers.

Which option would be best?

What is your remodel budget?

I would suggest a new updated cabinet/counter combo with dual sinks, but that is just what is customary in our area.

Are you doing other items in the bathroom that should be considered? Could we see the entire space?

We just redid our flooring in our bathroom and had a similar carpeted closet. We tore out the carpet and extended the bathroom tile into the closet. The bathroom appears much larger as the door is usually open or ajar.

We won’t be moving any walls or doing any major construction. I am only concerned with the question in my original post.

I think a vanity with two sinks would be much preferred to having a lowered section to sit at (while putting on makeup?). Two people getting dressed at the same time need two sinks. And definitely replace the whole cabinet to get a better arrangement of drawers (more useful than cabinets) if that's in your budget. Undermount the sinks for sure. It's a fairly easy DIY project if you are handy and that will save a lot of money. I replaced the vanity, sink, faucet, countertop and mirror in two bathrooms single-handedly. I even replaced the 45-year-old hot and cold undersink faucet valves with new ones, patched and textured the sheetrock, and painted everything. You may need to call in the pros to do the countertop if you do granite, marble or quartz, but the rest is easy.

A double vanity seems like it might be the way to go, only due to the fact that many designers are still doing them, and it's great for couples. However, do you think you both would use the double sinks or do you currently use the vanity aspect and want to keep that?

If you're redoing this area for resale, it might be best to wait until you're close to being ready to sell. If however you are doing this for your needs, then a double sink is probably the best idea.
