Do they start white and turn yellow? I'm thinking it's "Easter Egg", which is a small eggplant that turns yellow when ripe

There are many varieties of eggplants that do not grow large purple fruits. Many have smaller fruits in a wide range of colors. I grow Applegreen which is similar in shape to yours. It starts our light green and eventually will turn yellow when it is overripe. I haven't let one go that far in a few years and don't remember if it is a yellow like yours or not.

Pick some of yours before they get to the "stop growing" size and try eating them. Many of the smaller varieties have great flavor and mature earlier than the large purple types. In my area, many summers would be too cool for the large purples to produce much fruit. Several other colorful, earlier, and smaller varieties have done great.

Your eggplants are ripe and inedible. You should never allow eggplants to ripen. Only unripe eggplants are edible. Pick them when they are purple/white, just before they begin to lose their sheen. When they have a "washed out" appearance, they already past their prime. Once yellow appears, they are only good for the compost heap.

I think the eggplants look fine. It is possibly their natural color for the variety you chose to grow. You should not wait any longer for them to turn into other color lest the seeds become hard and the taste and texture become less agreeable.

According to OP's last post, they started off striped white and purple. Those ones usually turn yellow when ripe, and ripe ones are not edible.

Though I have never grown that particular eggplant, but judging from the picture, I DO NOT think that its is over ripen. Eggplants, unlike zuchinnies and cucumbers have a longer window of harvesting. even if the seeds get slightly hardened, they are still edible.
