no expert here, but I just had my dining room done. It looks like an applied molding over wallboard. Another option is to frame out the individual boxes with 1 x whatever primed molding
molding at the top edge and a base molding at the bottom. Sorry I don't know all the terminology, but it might get you started on a Google search. My trim guy and I just played with different profiles until we came with something we both liked.
